So this recipe from the book "the healthy college cookbook" of awesomeness is called "crispy cracker chicken" but i added things and made it a little different for reasons i will explain as i go so i call it easy popcorn chicken. :D
what you'll need-
1 egg
1/2 crushed crackers {i used wheat thins cause they're the best.....and the only crackers i own..}
1/2 grated parmesan cheese
2 chicken breasts, halved {i cubed it. cause cubing things is cool}
and nothing else. Easy recipe right??
and i added-
1/2 cup italian seasoned bread crumbs
cajun seasoning.
so here's what you do according to the recipe-
preheat oven to 350
use just the egg white. put into a small bowl.
mix the crushed crackers and cheese into bowl
dip chicken in the egg white and then the dry ingredients.
put into a baking dish.
bake for 35 mins
what i did-
got out a frying pan.
put some butter in it.
did everything else the same except i fried my chicken instead of baked it because i didn't want to wait 35 mins for it to be done. instead, it took 10 minutes. max.
i also made my family's famous gravy. so so so so good. i'd share the recipe except there isn't one. it's instinct and 19.75 years of watching and practicing. want a lesson? come over, i'll teach you. all you need to know for this post is that it is amazing.
and i made rice.
so i had gravy and chicken over rice. It was muy bien. mmmmm.
and for dessert i made myself some chocolate milk. my daddy would be so proud. :D
funny story of the day- i saw a guy eat a leaf off a tree in front of the art building. no joke.
the brach was really low and at the exact height as his mouth. when he walked by he totally stuck out his tongue and ripped a leaf off and ate it.... i guess that's one way to not starve as a college student.... i prefer salad.

Haha, at camp, we ate leaves all the time. Okay, I ate like one, but some of my campers couldn't get enough. Seriously. It was all about the sassafras.
