Recipe Wednesday- Potato Leek Soup

As a little girl i would eat this delicious soup that came in a little container kind of like the cup of noodles. It was called potato leek soup. and guess what, sad story, they don't make it any more. so i, being the smart girl i am, decided to make it for recipe wednesday even though i have never had it homemade before. :D


{i will take this moment to make sure you know what the heck a leek is. because none of my roommates did. It's a giant looking green onion. only a lot more mild.}


i thought it would take forever but decided that even though i got home from working in the studio after nearly 8 hours!!!!, that i'd still make it. Count your blessings, readers.


3 tablespoons butter
3 leeks, thinly sliced*
1 medium or large onion, chopped
6 – 8 russet potatoes, thinly sliced {i used half red potatoes and half russet, because i LOVE red potatoes...and i had some left over from last week so i needed to use them}
3 1/2 cups chicken broth (or enough to barely cover potatoes) {i used 4 cups}
1-2 cup heavy cream {i used 1.5}
salt to taste
black pepper to taste
1) Melt butter in a large saucepan over medium heat then add onions and leeks. Cook, stirring, until onions are limp and just slightly brown. {it looks like A TON of onions and leeks, do not fret little ones, it'll be okay}

2) Add sliced potatoes to saucepan then pour in enough chicken broth to just barely cover the potatoes. Continue cooking over medium heat until potatoes are tender. Using a potato masher, mash and stir potatoes until desired consistency is reached. As you mash the potatoes and the soup thickens, turn down heat and stir frequently with a large spoon to prevent scorching on the bottom. {true story!}
3) Add 1-2 cup of heavy cream and salt and black pepper to taste. Cook 15 minutes more over low heat, stirring frequently, then remove from heat and serve.

 
Notes: *Make sure to clean leeks and slice only the white and light green part of the leeks. **You don’t need to peel the potatoes as the peels add to the rustic texture of the soup. But make sure to scrub them and such.
to add some more flavor you can add a sprinkle of bacon bits. Ya know, to make your man happy. I've heard recently that bacon is more of a mans best friend than dogs are..... is this true??

Cool people in my life (guess who's first?!)

This is a post dedicated to the cool people in my life.  We will go from coolest to.... less cool.
1) Miss Betsy Reeves.  She is the shiz.  Beyond the shiz.  There are not words in the English language to describe this individual.  We have been BFFE's since 10th grade, even though I wanted it to happen much earlier, 7th grade to be specific.  But I was weird in 7th grade, so I can't really blame her for not wanting to be friends.  But it's fine, because now I am cool enough for her to be friends with me.  Things that make Betsy cool:  Ummm... Where to start?  Sometimes she is really nice to people.  And she is way funny.  And she was an Italian model for six years.  Actually, I think it was 20 years.  She skied on the Bolivian Olympic Ski team for 16 years, and she was kind enough to go skiing with me one time last winter even though I was slower than cold tar.  She listens to good music, and she is always trying to better my taste in music.  Because sometimes I listen to garbage.  She also tries to encourage me to read uplifting books, in place of the junk that I read about cowboys that barely passes as literature.  One of the best things about Betsy is that she is way good at dancing.   That sexy body can move in ways that no one has seen before.  That sounds dirty, but it's not.  She is a wonderful, yet wholesome, dancer.  Betsy is also an excellent seamstress.  Do you know the big flag at Macey's?  The one the size of Texas?  She made that.  And designed it. I think.  But she sews a lot.  And someday I am going to buy her a really nice sewing machine so that her dreams can be fulfilled at our apartment instead of only when she goes home during breaks.  Some people do not fully appreciate the value of good quality chapstick, but Betsy is not one of those people.  Her chapstick is the BEST.  She has high standards when it comes to moisturized lips.  This list could go on forever, but I should probably move on to person #2.

2) Allison Palmer.  First of all,  this girl is a babe.  I have often considered breaking our friendship (or her nose) just so that I don't have to go everywhere with a friend who is so darn beautiful.  One bummer about Allison is that sometimes she gives wedgies.  But I guess that is just one of the breaks.  Allison is from Vernal, and everyone knows that people from Vernal are highly intelligent.  She knows all about dinosaurs, and rodeos, and.... exotic weeds.  She is a genius.  Allison seems harmless when you first meet her, but she is quite the vivacious and vicious Vivian.  Don't mess with this girl.  She also happens to be one of the best roomies ever (not counting Betsy, of course).  Allison also enjoys making people fat, yet very happy.  Fry-day Friday is a mouthwatering experience that people all over the world covet.  She is also an excellent dishwasher unloader.  She puts all of the dishes in the cupboard in the most aesthetically pleasing way.  It makes me want to not touch them.  She even does it when it's not her turn.

3) Ashleigh.  She's my sister.  I think she's having a kid or something.

4)  Most of the other people that I know.  Here's to you.  Except for that one kid that almost ran over Betsy on  her way home from work yesterday.  Curse you.

Thought Thursday: A niece for Brianna :D

Sorry about this being on Friday.... i had a million and a half things going on yesterday. Not kidding. it was probably the busiest day of my entire semester thus far. Do you want to know what i did? 
Well after school i stayed for a few hours in the studio. but guess what. when i go to rewind my film it didn't rewind. wanna know why? because the film never got unwound. so the entire time i was shooting, none of the film was getting exposed. joy. I think the world is out to get me when it comes to photography. i never seem to have much luck with things working out the first time. 
then, I did Betsy a favor and went on a blind date doubling with her and another kid. he's a wonderful son of God.... but i think i'm for sure done with blind dates now. i haven had 3, and all 3 have been extremely awkward guys. 
Then i spun around in cirlces while leaving a message for Taylor. to Which i got a text from him saying, "hey i'm at work, in your message you sounded drunk, are you okay?" haha. yeah Taylor, i was just spinning around in circles. NBD. 
then i worked on my project for 3 d design. it is ridiculously time consuming. just saying.
then i went on a walk and had a nice talk with my friend Cameron. To which i went to powder Puff football with Betsy Allison Garin Eric and myself. to which i came home and decided to go to bed. 
there were no breaks in between any of the above things. none. 

so do you remember how ash and i have a name that we both want to use for our first born son? If ash has a boy first then she gets the name. SO, I will be praying for her to have all girls till i get married and have a boy first. {if you could all pray with me it'd be appreciated}

My vote is cast as it being a girl. Go vote. {on the right hand side} and she's going to have red, curly hair with blue eyes and would look adorable as a kindergartener with glasses. :D 

Melissa Q and I were at walmart the other night and i went and looked at the baby clothes and was awwing over all the little new born stuff. I don't think there has ever been anyone that has wanted Ash to have a baby more than I. Seriously, since she graduated high school i've been telling her she needed to get married and have a niece for me. 

Ashleigh wants a boy. I think Nathan said he wants a girl though. If it's a boy, no matter what they name him, Q, Em, and I are calling him Bill. get it, because of their last name? Who can say that they have a theme song? My nephew will, that's who.

1- your mom is the most beautiful girl there ever was. inside and out.

Recipe Wednesday-Childhood Favorites

Alright so i decided that i wanted to make something i liked as a kid... with a twist. Okay, so i only decided this cause it would be faster to make and i don't have much time today. or any time now for that matter..... but it's fine. 

here's what you need-

so ridiculously delicious. 
Fruity pebbles {apx 6 cups}

marshmallows {16-20 oz package}

real butter {because everyone knows real butter tastes better than margarine and shortening too}

Have you ever been at the VERY VERY front at a concert where you are standing next to the large metal baricades? Only it's not just "Stand" it's more like shoved, crammed, banged up to, scared for your life. i went to the paint dance with some lovely people. well, me being the bright person i am decided to follow the group into the middle of the crowd to the front. it was kinda cool for the first 2 minutes. then everyone else wanted to be in the front too. So the poor not so sturdy metal barricade things were wobbling all over the place and i thought i was going to be trampled to my death. Usually
 crowds don't bother me too much. This crowd did because no one knew how to take a chill pill. I mean, i'm sure they are wonderful people. anyways, so i decided that after 15 minutes i was done being almost squished to

death. so then i tried to leave. Bad idea #2. Why? Because as soon as you try to leave the very front, everyone and their roommates try to snatch your spot as quick as i can say dandruff. {which i can say pretty durn fast} so while i'm getting tossed back and forth while people push and shove to get in front i nearly lost my shoes and my feet too. After that it was not smooth sailing though. every time i'd try to get past someone they would give me dirty glares and not let me get passed. Everyone thought i was trying to get to the front, not the back, and wasn't letting me move because they didn't want anyone to cut them in line. Gee Whiz. So then i discovered that by screaming "I'm leaving the dance!!!!" very loudly so they could hear me, they moved real quickly. I think they all liked the idea of one less person in the crowd.

moral of the story- if you're stuck at the front of a concert or dance and feel like your going to be killed, just yell "i'm leaving!" and you'll survive. True story.

After we got home, Betsy broke out her maternity pants that we call the traveling maternity pants because they fit everyone. EVERYONE! no joke. they are super comfy. come over and try them on if you want to.

well, I should probably go read a book entitled "automatic millionaire" for my family finance class. Wait, actually i'm going to go to Mr. USU. 'Cause that's more fun.....










BUT!!!! In the most exciting news that I have ever blogged about!! Ashleigh is Pregnant!!! Congrats to Nathan and Ash! I can't wait for the end of March so I can meet your baby!!




 I am going to do a really good post about this tomorrow probably. I am going to start a thing for my future niece or nephew called "100 things you need to know about your mommy." Because as this baby's aunt, i have a lot of things I can tell her {i'm guessing it's a girl. okay more like praying} it's mom. And I have to start working on the spoiling part too. :D If you can't tell, i'm kind of REALLY excited about this. :D It has taken everything in me to not have shouted it out to the world when i found out more than a month ago!

Thought Thursday- the difference between guys and girls

alright so being a single college student you hear a lot of "you need to get married" or "find your eternal companion" or "go on lots of dates!!" at least once a week in church {if not more}

so today, i am going to write about how this isn't exactly the easiest thing to do or "no big deal" kind of phrase. I think the people telling us these things must have had an easy time dating and such because i don't see how they can say these things so nonchalantly as if it's not hard. PSH.  as if.

Here are 3 examples of how it's not easy

{these may or may not be personal experiences....}

example 1- guy takes girl on lots of dates. Guy tells girl "I like you". girl says "i like you" back. Guy doesn't take girl on any more dates and drops of the face of the planet only to find out he told another girl the exact same thing and chose her. super

so heres the problem with example 1. Guys don't want to commit. they always have to have someone new or as a back up.  girls don't like this. If a guy makes every girl feel really special then none of them feel special at all because it's not unique to you.

example 2- guy takes girl on date. they have a really good time. guy holds girl's hand {which is kind of a really BIG deal to girl since she doesn't do it like ever.} and so she {naturally} assumes he likes her. Wrong, apparently this means he likes her friend. But he never tells her this and has to find out through his friend telling her friend. But guy still flirts with original girl, driving her insane. super

so here's the problem with example 2. well there are lots. First, if you don't like the girl, don't hold her hand. It sends a completely wrong message to the girl who over analyzes things as it is. second. Why on earth are you going for 2 different girls that are good friends? isn't that a really bad accident waiting to happen?

example 3- Girl and guy are friends. girl and guy are really good friends. girl and guy like each other. girl and guy tell each other. girl and guy "date". girl prays to see if she should continue in the relationship and finds she shouldn't. super

so here's the problem with example 3. After the hard beginning steps of a relationship are done, it doesn't mean it's smooth sailing. in fact, i think this example is the hardest.

so here are some recognizable differences between boys and girls that make dating not easy what so ever. {in general. obviously not all the time.}
{B for Boy and G for Girl}

  • B- send mixed messages
  • G- over analyze
  • B- want physical reassurance
  • G- want verbal reassurance
  • B- don't ever say what they're thinking
  • G- expect guys to just know what to do.
  • B- don't make the first move
  • G- want the guy to make the first move
  • B- don't want a commitment
  • G- want a commitment
  • B- isn't mushy gushy
  • G- wants some romance
  • etc
  • etc
  • etc
So those are some frustrations. But it's fine. Not a big deal at all. 

sorry that i didn't really say too much spiritual stuff today on Thought thursday. so because i didn't, here's a quote for you that i have heard often-

isn't that sweet? i hope to feel like that someday. :D

Recipe Wednesday-a Brianna Original

alright so because of how extraordinarily busy i've been lately {no.... it has nothing to do with how much fun i'm having}
i decided to make something today that i made up last week and is SO SO SO amazing! i realize some of you people cook only from recipes. well this one is going to be apx.



1 jar of marinara sauce
1 jar of alfredo sauce
2 pkgs of different shaped noodles {cook separately. trust me. i've tried cooking them together and they get done at different times so one is soggy and one kind is perfect or one is hard and the other is perfect.}
1 lb or so of chicken cut in small pieces
italian seasoned bread crumbs.
1 cup mozzarella cheese
1 cup parmesan cheese {the real stuff not the kraft bottled junk}


put a little bit of marinara sauce on the bottom of a cake pan.
then half of one kind of noodles
then half can alfredo sauce
then bread crumbs {however much you feel like}
then chicken {1/4 of it}
then half of one of the cheese
then half of the other kind of noodles
then half of marinara
then bread crums
then chicken
then half of other cheese
rest of noodle number 1
rest of sauce choice 1
half of remaining bread crums
half of remaining chicken
rest of cheese number 1
rest of noodle number 2
rest of sauce number 2
rest of bread crums
rest of chicken
rest of cheese

like a new take on lasagna. only it has both kinds of sauces and a lot more flavors and textures. i'm a texture person when it comes to food.

bake at 350 degrees till completely warmed. {20-30 mins}

serve with delicious things like a salad and veggies and a tall glass of choc milk. or water. that works too.

My 9/11 Story

A what were you doing on this day 10 years ago story. Everyone has one. I could not tell you what exactly i was doing on just any day of any year. But on September 11, 2001 I could. I get scared in most movies that are even slightly "intense", but nothing comes close to the fear and sadness I felt watching the second plane crash into the tower that morning on the news. It really really terrified me as a 9 year old.

I had been looking forward to this day for a really long time because my grandma Cobb and my cousin were coming to Utah to visit for my lil' sister's Birthday {which is tomorrow, FYI. Everyone go tell Emilie happy 14th birthday tomorrow! which reminds me of how awful of a sister I am because i forgot to put her card in the mail on saturday!} We hadn't seen my grandma in several months which was entirely too weird because when we lived in Washington a few months before this we saw her every day.

My first worry, after hearing that the airports were being shut down because of the attack in New York, was that I wouldn't see my grandma that day! haha.

I didn't go to school that day because i was going to be going to the airport. But i ended up staying at home all day. The news was on all day long as pieces of the puzzle came together. i remember telling my dad, "can we change the channel for a little bit to something not so sad." to which we watched the Disney channel. But even "Even Steven's" or the "Lizzy Mcguire Show" couldn't get the image out of my head of the buildings falling or the 2nd plane crashing into the building.

I remember thinking to myself "How could anyone do this?" and i still wonder that. I don't understand how people could hate us so bad that would make them want to do this. And this, starting a war lasting 10 years now!


I am grateful for all the people that day willing to give their lives for our freedom. Those in the buildings and crashes, the firefighters and the police. I am so grateful for the military of our country, who protect this country,who go half way across the world, who leave their wives and children, who sometimes die, to protect the freedoms we are used to everyday.

I do not think I could ever forget that day, but mostly, I don't want to forget that day.


Here is a picture that was in the Salt Lake Tribune on the 15 of September 2011. It hangs on my fridge where it has been since that day. My grandma and cousin were in the first flight coming into the SLC airport. My sister Emilie {so weird that back then we had a different last name. it seems almost like i have had my last name now, for my whole life} and cousin, kyle, {and Quinton, who's head you can barely see} were hugging. so cute! i love this picture! So so weird that 10 years ago they were so little!

Thought Thursday-Womanhood

sometimes i feel like i'm one of those domestic goddesses. Like everything that Mormon women are known for or stereo typed with i kinda do.... for instance-
  • i cook
  • i decorate
  • i like crafts and creativity
  • i'm a photographer
  • i want lots {well in the world's eyes, not mormon culture} of kids
  • i want to be a homemaker and not have a huge career after I get married and have kids
i think mormon women are most known for their homemaking. And i can already see that when i have my own home i will be just the same...heck, i only have an apartment and i already do this!

I'm pretty sure that 70% of mormon housewives are self proclaimed "photographers". which kinda drives me nuts. And for the record, i Loved photography and wanted to be a photographer long before i ever made the connection to this fact. haha

i want to be a stay at home mom. This is what the LDS church teaches is best for the family. And i've never had a problem with this. I think it sounds perfect, actually.

and i cook too. basically, i was made to be a mormon women.

many cultures outside the LDS faith find a lot of those things archaic.

But i don't.
Yes, maybe it's "old fashioned"

but i don't care.
I've never had a problem with it.

I know that men and women have different roles in the church and in this world. I've never felt left out because I can't hold the priesthood. I feel blessed because instead, i have the gift to one day become a mother. Which in my humble opinion is super awesome!

here are some quotes that i really like on womanhood and motherhood.

I have a testimony of my divine right as a women. It's a gift and blessing. It's not holding me back from anything; it's helping me become more. I'm grateful for my dad, Dean, and grandpas, for being such great examples of how a daughter of God should be treated by their husbands. I'm also grateful for my mom and grandmas for teaching me what a mom should be and about the special gifts women have.

Recipe Wendesday-easy popcorn chicken.




first- pop a bag of pop corn.
second-crush popcorn into tiny bits
third-throw cubed raw chicken into popcorn
fourth- cook
fifth- eat!


joke!

So this recipe from the book "the healthy college cookbook" of awesomeness is called "crispy cracker chicken" but i added things and made it a little different for reasons i will explain as i go so i call it easy popcorn chicken. :D

what you'll need-

1 egg
1/2 crushed crackers {i used wheat thins cause they're the best.....and the only crackers i own..}
1/2 grated parmesan cheese
2 chicken breasts, halved {i cubed it. cause cubing things is cool}

and nothing else. Easy recipe right??

and i added-
1/2 cup italian seasoned bread crumbs
cajun seasoning.


so here's what you do according to the recipe-
preheat oven to 350
use just the egg white. put into a small bowl.
mix the crushed crackers and cheese into bowl
dip chicken in the egg white and then the dry ingredients.
put into a baking dish.
bake for 35 mins

what i did-
got out a frying pan.
put some butter in it.
did everything else the same except i fried my chicken instead of baked it because i didn't want to wait 35 mins for it to be done. instead, it took 10 minutes. max.

i also made my family's famous gravy. so so so so good. i'd share the recipe except there isn't one. it's instinct and 19.75 years of watching and practicing. want a lesson? come over, i'll teach you. all you need to know for this post is that it is amazing.

and i made rice.

so i had gravy and chicken over rice. It was muy bien. mmmmm.



and for dessert i made myself some chocolate milk. my daddy would be so proud. :D

funny story of the day- i saw a guy eat a leaf off a tree in front of the art building. no joke.
the brach was really low and at the exact height as his mouth. when he walked by he totally stuck out his tongue and ripped a leaf off and ate it.... i guess that's one way to not starve as a college student.... i prefer salad.

anyways, have a wonderful day.
i'm going to watch independence day tonight. never seen it. hope it's good. but how could it not be?? it has Will Smith in it!!

police on my back and relating Aggie football to a pregnant women's emotions.






so my title doesn't really have that much to do with what i'm writing about. but it's a good title right??
first things first- let me go grab my journal so i may give you a good list of everything i've done {activities} since moving to logan. {and brace yourself/[selves if you have multi personality disorder]}

  • stuck in traffic because a truck full of hazardous materials crashed into another car. {if i get cancer, this is why}
  • played ultimate frisbee
  • shared a bowl of top romen with betsy. lady and the tramp style :P
  • woke up to a serious banging on my window by the window washers.
  • comedy improv; The Antics
  • put my fishies Whisk and Teaspoon {male and female beta's} together and all they did was eat each others fins!! so i separated them again. bad, fishies. bad!
  • canoeing and cliff jumping.
  • edited pictures of my cousins
  • discovered pinterest.com
  • taste of logan
  • swing dancing x 2
  • grandpa cobb turned 79! {FYI- the grandpa my first son will be named after- James}

  • found out the ratio of girls to guys in my ward is 3{girl} to 1 {boy}. Which isn't as bad as the ratio last year 4.5 to 1. {does anyone know if boys actually go to school. cause i'm pretty certain there are more girls everywhere i go.

  • Betsy became my mom. and i might become her aunt. we should write a song similar to "i'm my own grandpa" minus the annoyingness of it.
  • oregon trail on Betsy's i touch. and 2 of my 3 kiddos got carried away by the balding Eagles! So sad. i cried. but only a little.

well that's good for now. I'm not cooking anything too elaborate tomorrow for recipe wednesday. but it's still something i've never made before. get your excited faces on!
